Creamy Roasted Beet Dip


Looking for an interesting and yummy recipe for your garden beets, or a unique dip for your holiday party?

This dip is wonderfully flavorful and smooth.  Pair it with organic blue corn chips, and it makes a beautiful presentation on any table.

Here's what you'll need to do:

Peel and cube a large beet along with two cloves of garlic.  Spray with olive oil and roast in the oven at 425F for about twenty minutes.

After cooling, puree in the blender or food processor with 1/4 cup olive oil, 1/4 cup parmesan cheese, 1/4 cup of walnuts, 1 tsp cumin, two heaping spoonfuls of plain yogurt, and salt and pepper to taste.  Add other chopped herbs if desired, such as basil, parsley, etc.

Easy, so yummy, good-for-you, and beautiful.

  2. Obviously I need to wake up a bit! I thought you said Roast Beef dip and when I saw the pink dip, I couldn't figure it out! I had to read it a couple of times!!!

    Now that I know it's beets, looks yummy!!!
